Ingredients

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease the sides and bottom of a 13x9-inch (33x22 cm) baking dish with butter.
  2. Spread the diced potatoes evenly over the bottom of the dish and set aside.
  3. In a skillet over medium-high heat, brown the sausage, crumbling it as it cooks. When cooked through, remove it with a slotted spoon to the baking dish and layer it over the potatoes.
  4. In the same skillet, if there is only a little grease left, add 2 tablespoons of butter. Cook the pepper and onion over medium heat, stirring often, until softened (about 5 minutes).
  5. Add the garlic and cook until fragrant, about 30 seconds. Spread this mixture over the sausage.
  6. Sprinkle the cheese into the dish and gently stir everything together so the ingredients are well distributed.
  7. In a large bowl, whisk the eggs vigorously until well combined.
  8. Whisk in the milk, cream, Tabasco, pepper, nutmeg and salt until well combined. Pour evenly over the dish.
  9. Bake on the center rack at 375°F (190°C) for 40-45 minutes, until the edges are set and the very center is only slightly jiggly. Let cool for 10 minutes before serving.
