Breakfast Meal Prep - Vegan Chocolate Brownie Waffles
Ingredients
- Almond flour1 ¼ cups
- Arrowroot flour/powder¾ cups
- Dark chocolate · powder⅓ cups
- Baking powder2 tsp
- Coconut milk1 can
- Maple syrup3 tbsp
- Apple cider vinegar1 tbsp
- Walnut · crushed¼ cups
- Dark chocolate chip¼ cups
Instructions
- Heat the waffle iron.
- In a bowl, combine all the dry ingredients with a fork, sifting out any flour lumps.
- Add the wet ingredients to the dry and stir and fold until well mixed. Let the batter rest 5 to 10 minutes without stirring. It should be a bit thicker than pancake batter but still somewhat runny.
- If the batter is too thick, add coconut milk (or almond milk) one tablespoon at a time until it reaches the right consistency. If it is too thin, add almond flour one tablespoon at a time until it thickens.
- Spray the hot waffle iron with cooking spray, pour in the batter and cook for about 5 to 7 minutes.
- The waffles should be slightly crisp and flaky outside, with a moist, chocolatey, gooey inside.
