Breakfast Strata
Ingredients
- Bread · cubed8 cups
- Bacon8 slices
- Onion · chopped½ cups
- Garlic · finely minced3
- Spinach · chopped3
- Parmesan cheese · shredded1
- Egg9
- Milk2 cups
- Salt1 tsp
- Mustard · ground1 tsp
- Black pepper · ground¼ tsp
Instructions
- Grease a 9x13-inch casserole dish (or similar) or spray it with nonstick spray. Spread the bread in a single layer in the dish and set aside.
- Cook the bacon in a large skillet until crisp, following the package directions. Drain off all but about 1 tablespoon of the fat (or drain it all and add 1 tablespoon olive oil). Let cool until you can handle it, chop into bite-size pieces and scatter over the bread.
- In the same skillet, cook the onion over medium heat until soft, about 4 minutes. Add the garlic and spinach and cook, stirring occasionally, until the spinach wilts, about 2-3 minutes. Remove from heat, spoon evenly over the bread and bacon, then sprinkle all the cheese on top.
- Whisk the eggs, milk, salt, ground mustard and pepper in a large bowl. Pour evenly over the cheese. Cover tightly and refrigerate for 1 hour or up to 12-16 hours.
- Let the casserole stand at room temperature for 15 minutes.
- Preheat the oven to 375°F (191°C).
- Bake uncovered for 20 minutes. Loosely cover with foil and bake a further 30-35 minutes, until browned at the sides and puffy in the centre (about 50-55 minutes in total).
- Take out of the oven, add any optional garnish, and let cool for 5 minutes before serving.
