Instructions
- Cut the chuck roast into 3–4 inch pieces and season them well all over with salt.
- Heat a Dutch oven or deep skillet over medium heat. Tear the chiles into 1-inch pieces, toast them in the pan for 4 minutes, stirring or shifting them every minute. Move them to a bowl, cover with hot water and set aside.
- Add 2 tablespoons of the oil to the pan and heat for 30 seconds. Cook the beef in 2 batches for 8 minutes total, turning once halfway. Set the beef aside on a plate, leaving the pan unwiped.
- Lower the heat to medium-low and add 1 tablespoon oil. Cook the onion wedges for about 2 minutes until they start to soften. Stir in the garlic, oregano, paprika, cumin, thyme and cinnamon and cook for 2 minutes. Pour in the beef broth, scraping the bottom of the pan. Take the pan off the heat.
- Blend the crushed tomatoes, vinegar, cilantro, drained chiles plus ½ cup of their soaking liquid, and the onion-broth mixture for about 30 seconds until smooth. Stir in a heavy pinch of salt to taste.
- Return the beef and its juices to the pan. Working in 3 batches, pass the blended sauce through a fine-mesh strainer into the pan, pressing out as much liquid as possible, and discard the solids. Add the bay leaves.
- Bring to a simmer over medium heat, then lower to low and simmer for about 3½ hours, until the meat is tender and starts to fall apart.
- Heat the remaining 1 teaspoon oil in a small skillet over medium-low heat. Pour 1 cup of birria sauce into a shallow bowl. Dip a tortilla in the sauce, coating both sides, then place it in the skillet and cook for 30 seconds. Flip it and top with about 1 tablespoon queso blanco, ½ teaspoon diced onion and 1 teaspoon cilantro. Fold in half and cook 30 seconds per side, until the cheese melts. Repea
- Serve the tacos with the remaining birria sauce for dipping.
