Ingredients

Instructions

  1. In a small bowl, whisk the warm milk, egg and 1 Tbsp of the sugar until well combined.
  2. Add the yeast, mix again, and leave for 10 to 15 minutes until frothy and bubbly.
  3. In a large bowl or stand mixer bowl, combine the flour, cocoa powder, remaining sugar and salt.
  4. Pour the yeast mixture into the dry ingredients and mix on low speed for a few minutes until a dough forms.
  5. Add the room-temperature butter and mix for 5 to 10 minutes until the dough is soft and smooth.
  6. Add the chopped chocolate and knead until evenly distributed.
  7. Shape the dough into a ball, place in an oiled bowl, cover and leave to rise for about 2 hours until doubled, or refrigerate overnight.
  8. Divide the dough into eight equal pieces and shape each into a ball by pinching the bottom and rolling it on the work surface.
  9. Place the balls in a greased rectangular baking dish, cover and leave to rise for an hour until doubled.
  10. Preheat the oven to 180°C / 350°F.
  11. Pipe a cross onto each bun in one continuous line.
  12. Bake for about 30 minutes.
  13. While the buns bake, heat the sugar and water in a small saucepan over medium heat until the sugar dissolves.
  14. While still warm, brush each bun with the sugar syrup.
  15. Mix the chocolate cross ingredients in a small bowl until smooth, then transfer to a piping bag and snip off the tip.
