- Black pepper · groundto taste
- Broccoli2 cups
- Macaroni pasta · dried cooked drained10 oz
- Vegetable oil · for frying

Instructions
- Make the broccoli mac and cheese: line a baking sheet with parchment. Melt the butter in a large pot over medium heat, whisk in 1 tablespoon flour and cook 1 minute until light tan.
- Whisk in the half-and-half, simmer 3 to 5 minutes until slightly thickened. Whisk in the cheddar until smooth; the sauce should coat the back of a spoon.
- Take off the heat, stir in the nutmeg, season with salt and pepper. Fold in the broccoli and cooked macaroni, spread on the lined sheet and chill for 1 hour.
- Heat vegetable oil in a medium pot over medium heat to 350°F (180°C). Put the flour, beaten eggs and crushed corn flakes into three wide bowls.
- Scoop the macaroni mixture with a 2-ounce (#16) ice cream scoop into your palm. Press a cube of mozzarella into the centre, cover with more mac and cheese and roll into a tight ball, fully enclosing the cheese. Repeat with the rest.
- Roll each ball in flour, then egg, then crushed corn flakes until fully coated.
- Fry 2 to 3 balls at a time for 2 to 3 minutes, until golden brown. Drain on a paper towel-lined plate and serve warm.
