Instructions

  1. Clean the broccoli: separate the florets from the stalks, wash the florets and set them aside. Peel the stalks and cut them into small pieces.
  2. Plunge the broccoli into plenty of salted boiling water and cook about 15 minutes, until tender. Drain well in a colander.
  3. Make the béchamel: melt the butter in a small saucepan with salt and pepper, and flavour with grated nutmeg. Once melted, add the flour and whisk quickly.
  4. Cook a few seconds until a golden roux forms. Pour in the milk all at once and keep stirring until the sauce reaches the desired thickness. Let it cool slightly.
  5. Pass the broccoli through a food mill, keeping a few florets aside for garnish, and collect the purée in a bowl.
  6. Add the grated Grana Padano, the egg yolks (keep the whites aside), salt and pepper to the purée.
  7. Add the béchamel and mix thoroughly. Beat the egg whites to stiff peaks, then gently fold them into the broccoli mixture with a spatula, taking care not to deflate it. Transfer to a piping bag.
  8. Butter 10 moulds of 4 oz capacity and coat them with breadcrumbs. Place them in a baking pan and fill each with the mixture to about 1/2 inch from the top. Level the surface with the back of a teaspoon.
  9. Pour preheated water into the pan until it reaches one third of the height of the moulds. Bake in a bain-marie at 356°F for about 40 minutes.
  10. 10 minutes before the end, make the goat cheese sauce: put the goat cheese in a saucepan over very low heat. Add the milk gradually, whisking just enough to melt the cheese into a cream of the desired thickness.
  11. Season with salt and pepper and stir until smooth and lump-free. When the baking time is up, check the flans and take the moulds out of the oven.
  12. To serve, spread goat cheese sauce on each plate, then invert the moulds to centre the flans on the plates. Garnish with the reserved broccoli florets and more goat cheese sauce to taste.
