Brownies made with a Sweet Potato!

Ingredients

Instructions

  1. Preheat the oven to 400°F (200°C). Cut the sweet potato in half lengthways, place cut side down on a parchment-lined baking dish and roast about 25 minutes, until fully cooked and fork-tender.
  2. Once cooked, lower the oven to 350°F (180°C). Scoop the flesh onto a plate, mash until completely smooth with no lumps, then chill it in the fridge or freezer.
  3. Whisk the eggs in a large bowl, then add the honey and almond butter and whisk again.
  4. Add 1 cup of the mashed sweet potato and whisk.
  5. Stir in the cacao powder and a good pinch of salt with a spatula until just combined, without overmixing.
  6. Fold in the chocolate chips and baking powder to make a thick, gooey batter.
  7. Line a 9x9-inch brownie tin or baking dish with parchment. Pour in the batter, flatten the top with a spatula and scatter extra chocolate chips over it.
  8. Bake 20-25 minutes, until a toothpick comes out mostly clean and not wet, possibly with some melted chocolate. Cook longer for a cakier texture; less time gives a fudgier result.
  9. Cool in the pan for 30-45 minutes, then slice into squares.
