Bruschetta Pasta without any cooking
Ingredients
- Tomato10 oz
- Spaghetti6 oz
- Garlic1
- Basil
- Extra virgin olive oil3 tbsp
- Salt
- Black pepper
- Parmesan cheese · grated
Instructions
- Dice the tomatoes small and put them in a large bowl.
- Chop the basil, grate the garlic finely and add both to the bowl. Add the olive oil, season with salt and pepper, and stir.
- Cover and refrigerate for 30 to 60 minutes to marinate, or leave for 10 minutes while you cook the pasta.
- Boil the spaghetti in a large pot of salted water, reserving some of the cooking water.
- Drain the pasta and add it to the bowl with the tomatoes. Add 2 tablespoons of the reserved cooking water and toss gently.
- Let it rest for 10 minutes so the pasta absorbs the tomato juices. For a cold pasta salad, refrigerate during this time instead.
- Serve with grated parmesan if you like.
