Brussels Sprouts, Shiitake & Ham Pasta
Ingredients
- Spaghetti100 g
- Olive oil1 tbsp
- Brussels sprout200 g
- Ham80 g
- Shiitake mushroom50 g
- Butter1 tbsp
- Mentsuyu1 tbsp
Instructions
- Boil plenty of water in a saucepan, add a large pinch of salt and cook the spaghetti until al dente, following the packet time.
- Before draining, scoop out about 1/4 cup of the pasta water and set it aside.
- Heat the olive oil in a frying pan over medium heat. Place the Brussels sprouts cut side down and cook for about 3 minutes, until the cut side is nicely browned.
- Turn the sprouts over, cover, reduce the heat to low and cook for a further 2–3 minutes, until the rounded side is browned.
- Remove the lid. Add the shiitake and sauté for 1–2 minutes, then add the ham strips and sauté for about a minute.
- Add the butter to the pan and stir. Add the mentsuyu and mix quickly.
- Turn the heat up to high. Add the drained pasta and 1–2 tablespoons of the reserved pasta water.
- Toss quickly so every strand is coated with sauce and the vegetables and ham are spread evenly.
- When no liquid remains in the bottom of the pan, take it off the heat and serve straight away.
