- Olive oil1 tbsp
- Butter2 tbsp
- Onion · diced1
- Mushroom · sliced300 g
- Garlic · chopped6
- Parsley · chopped5 g
- Dijon mustard1 tsp
- Chicken stock½ cups
- Parmesan cheeseto taste
Instructions
- Boil a pot of salted water. Cook the pasta 1 minute less than the packet says, then drain and keep some of the pasta water.
- Melt the oil and butter in a pan over medium-high heat. Add the onion and mushrooms, season, and saute for 10 minutes. If the pan gets too hot, lower to medium.
- Add the garlic and cook, stirring often, for 1 minute.
- Add the Dijon mustard, the wine or stock, and the parsley. Stir and let the liquid reduce by two-thirds. Check the seasoning, then add parmesan to taste and loosen the sauce with pasta water as needed.
- Add the drained pasta and toss for 1 minute to finish cooking and absorb the sauce. Check seasoning and consistency, then add more parmesan to taste.
- Serve in bowls, garnished with parsley and parmesan.
