Ingredients

Instructions

  1. Boil a large pot of salted water and cook the pasta for 1 minute less than the packet says.
  2. In a large high-sided pan over medium-high heat, cook the prawns in olive oil for 1 minute per side, season, then remove them from the pan.
  3. Sauté the onion for 4 minutes, then add the garlic for 1 minute.
  4. Lower the heat to medium, stir in the tomato paste and cook for 2 to 3 minutes. Deglaze with the white wine, add the halved cherry tomatoes and cook for 5 minutes.
  5. Season, then cook for 8 minutes, squashing the tomatoes with a wooden spoon until soft and broken down. Raise the heat to medium-high.
  6. Add the cream, chilli and basil stems, simmer, then lower the heat and cook for 6 to 7 minutes until thickened.
  7. Stir in the parsley, the drained pasta and the prawns with their juices. Loosen the sauce with pasta water as needed, then check the seasoning.
  8. Serve in bowls topped with grated Pecorino Romano, cracked black pepper and basil leaves.
