Budget Meal Prep - Tuna Stuffed Red Potatoes
Ingredients
- Potato4
- Greek yoghurt8 oz
- Dijon mustard2 tbsp
- Garlic powder½ tbsp
- Chive · chopped2 tbsp
- Dill · chopped1 tbsp
- Tuna · drained10 oz
- Cheddar cheese · shredded⅓ cups
- Olive oil1 tbsp
- Salt
- Black pepper
- Asparagus1 ½ lb
Instructions
- Heat the oven to 400°F.
- Prick the red potatoes with a fork, place on a baking tray and bake 45–55 minutes, until a toothpick slides in easily. Let cool until you can handle them.
- Slice off the top of each potato and scoop out the flesh with a spoon, leaving a hollow shell. Put the flesh and tops in a large bowl.
- Mash the potato well, removing as many lumps as possible. Add the Greek yogurt, mustard, garlic, chives and dill and mash until smooth.
- Mix in the cheese and tuna, then add the olive oil, season with sea salt and pepper, and mash with a spatula until smooth or to your liking.
- Spray the potato shells with a little olive oil, fill them with the mixture, and top with pepper (and cheese if you like). Bake 15–20 minutes, until the outside is golden brown.
- While the potatoes bake, spray a nonstick skillet with olive oil over medium-high heat. When warm, add the asparagus and minced garlic, and turn the spears so they sear on all sides.
- Squeeze in some lemon juice to create steam and caramelise the spears. Sear for 3–5 minutes, then remove from the pan.
