Ingredients

Instructions

  1. Put a large pan of water on to boil for the macaroni.
  2. Heat the oil in a large frying pan over medium-high heat. Add the chicken, salt, pepper, Cajun spice and cayenne, and cook for 7-8 minutes, stirring often, until just cooked through. Move the chicken to a bowl.
  3. Cook the macaroni in the boiling water according to the packet instructions. Drain, reserving a cup of the cooking water.
  4. Melt the butter in the same frying pan over medium heat. Add the onion and jalapeño and cook for 5 minutes, stirring often, until softened.
  5. Stir in the flour until it coats the onion and cook for 1 minute. Add the milk a splash at a time, whisking between additions, until smooth with no lumps.
  6. Keep stirring over heat until the sauce begins to thicken. Add the chicken and pasta and cook for 1 more minute to reheat the chicken. Add splashes of reserved pasta water if you want a looser sauce.
  7. Stir in the salt, pepper, hot sauce, Worcestershire sauce and all three cheeses. Cook, stirring, for 2 more minutes until the cheese melts.
  8. Divide between bowls and top with sliced spring onions.
