Ingredients

Instructions

  1. Cut the whole chicken into 10 pieces and pat them dry with paper towel.
  2. Weigh the chicken pieces in a large bowl. Add salt, baking powder and cornstarch, each equal to 1% of the chicken's weight, and toss until evenly coated.
  3. Place the pieces on a wire rack set over a foil-lined baking sheet. Refrigerate uncovered for at least 4 hours, up to 24.
  4. Preheat the oven to 450°F (232°C).
  5. Blot any visible moisture from the chicken with paper towel.
  6. Roast for 20 to 25 minutes until the skin starts to render, crisp and brown, turning the wings and drumsticks for even browning. Then roast another 15 to 25 minutes until evenly browned and crispy.
  7. Meanwhile, melt the butter in a saucepan over medium-low heat. Add the hot sauce, garlic powder and black pepper and stir until smooth and emulsified. Remove from heat.
  8. Whisk the blue cheese dressing ingredients together, thinning with milk or water if needed. Season with salt and pepper to taste.
  9. Toss the hot chicken in the buffalo sauce until evenly coated and serve immediately with the dressing.
