Burnt Basque Cheesecake (Tarta De Queso)
Ingredients
- Cream cheese226 g
- Heavy cream1 cup
- Sugar100 g
- Egg2
- Flour30 g
- Vanilla½ tsp
Instructions
- Preheat the oven to 450°F (230°C).
- Line a 6-inch cake pan with 2.5-inch sides with parchment paper, pressing it into the pan and creasing the sides to hold its shape.
- Blend the cream cheese, heavy cream, sugar, eggs, cake flour and vanilla extract until smooth. Optionally let the batter rest about 20 minutes so air bubbles settle.
- Pour the batter into the pan and tap the pan a few times on a towel to release remaining bubbles.
- Bake until the top is just short of black, about 22 minutes in the author's oven (time varies). The centre should still be very jiggly.
- Cool on a rack, then refrigerate overnight in a sealed bag.
- Heat a pot of water to boiling. Warm a long sharp knife in the hot water and wipe it clean before each slice.
