Preparación

  1. Beat the softened unsalted butter with the finely chopped garlic until the garlic is evenly spread through the butter, then set it aside.
  2. Mix the ground chuck and chopped bacon gently until combined, then shape into patties about 3 inches across. Season both sides with salt and pepper.
  3. Heat a fry pan over medium-high heat with 1 tablespoon of clarified butter. Add the sliced onion and cook, stirring now and then, until softened and slightly golden. Season with a pinch of salt and pepper and keep cooking until tender and a rich light golden color. Remove from heat and set aside.
  4. Add another tablespoon of clarified butter to the pan and raise the heat to high. Place the patties in the pan and leave them undisturbed for about 2-3 minutes to sear.
  5. Flip the patties and cook another 2-3 minutes, or until done to your liking.
  6. During the last minute of cooking, top each patty with a slice of cheddar and let it melt.
  7. While the patties cook, slice the brioche bun in half and spread a thin layer of garlic butter on the cut sides.
  8. Heat a separate fry pan over medium heat with a little clarified butter. Place the bun halves cut side down and toast until golden and crisp.
  9. Place one toasted bun half on a plate, add a cheesy patty, spread a generous amount of caramelized onions on top, set the second patty on the onions, and close with the remaining bun half.
  10. Serve immediately while warm.
