Ingredients

Instructions

  1. Break the eggs into a bowl, add the egg-mix salt, pepper and red chilli flakes, then whisk.
  2. Finely chop the garlic and the parsley (reserve the parsley for garnish).
  3. Heat 1 tsp oil in a pan, add 2 tbsp butter and keep the heat on low.
  4. Pour in the whisked eggs and leave them undisturbed for about a minute.
  5. Fold the eggs very slowly to form large soft chunks, breaking big pieces smaller if needed. Cook for 2–3 minutes, then move to a plate.
  6. In the same pan, add 1 tsp oil and 3 tbsp butter and let it heat. Add the garlic and sauté on medium-low heat for 1–2 minutes.
  7. Add the pepper powder, chilli flakes and Italian seasoning, then reduce the heat to low.
  8. Add the corn flour and stir constantly on low heat to avoid lumps; cook for 1 minute.
  9. Pour in the milk and add the 1/2 tsp salt. Cook on low heat for 1–2 minutes, until the sauce thickens.
  10. Return the cooked eggs to the sauce and mix gently so the pieces stay whole. Cook for 1–2 minutes and serve garnished with the parsley.
