Ingredients

Instructions

  1. In a small bowl, whisk the buttermilk, eggs and vanilla with a fork until well combined.
  2. Melt the butter in the microwave or in a small pan, then set aside.
  3. In a larger bowl, mix the flour, sugar, salt, baking powder and baking soda with a whisk or wooden spoon.
  4. Pour the wet ingredients and melted butter into the dry ingredients and fold gently until just combined. Small lumps are fine; stop as soon as no dry flour is visible.
  5. Heat a heavy frying pan, such as cast iron, over medium-low heat for a few minutes. Add about 1/2 tsp butter and let it melt.
  6. Pour in 1/3 cup of batter. Cook about 2 to 3 minutes until the edges look set.
  7. Flip and cook the other side for a few minutes. The pancake is done when the centre springs back when pressed.
  8. Keep the finished pancakes warm on a plate, stacking them as you go, and repeat with the remaining batter.
