Ingredients

Instructions

  1. Press the tofu for 15 minutes (wrapped in paper towel and a kitchen towel under heavy books, or in a tofu press). Slice it 1/4 inch thick or tear into bite-size pieces. Preheat the oven or air fryer to 350°F.
  2. Mix the cajun spice blend with the lime juice, olive oil and salt to make a paste. Rub it onto the tofu and let it chill at least 15 minutes (up to an hour).
  3. Bake the tofu at 350°F for 30 to 35 minutes, or air fry at 350°F for 9 to 11 minutes. Cool a few minutes, then slice and serve.
  4. Meanwhile, wash the rice and soak it at least 15 minutes, then drain it.
  5. Put the rice in a saucepan with the salt, water and oil if using. Add a bay leaf if you like.
  6. Reduce the heat to medium-low and cook covered for 18 to 20 minutes.
  7. Fluff the rice, mix in the lime juice and half the cilantro. Taste and adjust carefully. Cover and rest 2 minutes.
  8. Garnish with the remaining cilantro when serving.
