Cameroon Fish Rolls
Ingredients
- Flour3 cups
- Margarine4 tbsp
- Baking powder¼ tsp
- Sugar2 tbsp
- Salt¼ tsp
- Sardine1 can
- Bell pepper2
- Onion½
- Carrot1
- Celery2 sprigs
- Garlic2
- Oil for frying
Instructions
- Grate the carrots, then finely chop the onion, garlic, bell pepper and parsley.
- Heat 2 tablespoons of oil from the sardine can in a pan for 1 minute, then sauté the onion and garlic until fragrant.
- Add the other vegetables, stir, and push them to one side. Drain the sardines, add them to the cleared side and mash them lightly, without making them mushy. Mix everything together; the filling is ready.
- Mix the flour, sugar, baking powder, salt and margarine or butter with your fingertips until well combined. Add the water little by little until a dough forms. Knead on a floured board for about 2 minutes until smooth and elastic.
- Pinch off pieces slightly smaller than a golf ball. Roll each into an oval on a floured board.
- Place a tablespoon of filling at one end, fold the dough over it, and fold in the edges. Roll up to the other end. Repeat with the remaining dough.
- Heat the oil on high for 5–10 minutes until hot, then lower to medium. Fry the rolls without crowding the pan, for about 5–8 minutes until golden brown.
- Drain on paper towels to absorb excess oil.
