Cameroonian Okra Soup
Ingredients
- Okra½ lb
- Egusi1 cup
- Fish1 lb
- Stock cube1
- Onion1
- Crayfish½ cups
- Salt
- Chili pepper1
Instructions
- If using meat, boil it in an amount of water equal to the meat's level until tender. Halfway through, season with salt and add a quarter of the chopped onion.
- Mix the egusi with water to make a paste, add it to the boiled meat and cook for 10 minutes.
- Add the smoked fish and cook for another 5 to 10 minutes, adding water as needed to keep the soup at the right consistency.
- Stir in the seasoning cube(s), salt to taste and the crayfish, then simmer for 2 minutes.
- Add the chopped or roughly blended okra and mix into the soup, adding water if you want it lighter. Cook for 2 to 5 minutes, until the okra is still green and vibrant. Taste and adjust the seasoning.
