Cameroonian Pancakes
Ingredients
- Flour2 cups
- Sugar½ cups
- Egg3
- Milk1 cup
- Salt¼ tsp
- Vanilla1 ½ tsp
- Oil3 tbsp
Instructions
- In a large bowl, whisk together the flour, sugar and salt.
- Add the water, milk, vanilla extract and 2½ tablespoons of the oil, then mix to a batter.
- Beat the eggs, add them to the batter and mix in.
- Heat a frying pan over medium heat. Add about 1 teaspoon of the remaining oil and spread it over the base. Heat for about 2 minutes.
- Pour about ¼ cup of batter into the pan, enough to coat the base (use more or less depending on pan size).
- Cook for about 2 minutes on the first side, flip, then cook for 1–2 minutes more. Transfer to a tray.
- For the next pancake, pour batter into the hot pan without extra oil and cook as before. If the pan sticks, add about ½ teaspoon of oil before the next pancakes.
- Serve warm.
