Instructions
- Cut the chicken, rinse well and put it in a pot. Add half a cup of water, 2 teaspoons of the ginger-garlic-herb blend, salt and 1.4 teaspoon white pepper. Cook on medium heat for 20 minutes, checking the water and adding more as needed.
- Remove the chicken from the stock, place it on a greased oven tray and grill or broil for 10 minutes.
- Peel the potatoes, rinse them and boil them in water halfway up in a pot for about 20 minutes, until done.
- Place the cooked potatoes on a greased oven tray and grill or broil them in a preheated oven for 10 minutes.
- Chop the tomatoes and blend them. Chop the onion and set aside.
- Heat the oil in a pot, add the onion and saute for about 3 minutes. Add the tomatoes and fry, stirring constantly, until the tomato begins to stick to the bottom of the pan.
- Add the spices and stir well. Pour in the stock from the chicken to make a stew, adding water as needed for a thinner stew.
- Season with salt, stock cubes, and the remaining white pepper, and stir the stew well.
- Add the chopped green onions, then the carrots, green beans and green pepper, and stir well.
- Add the grilled chicken and mix well.
- Add the potatoes and mix gently so they do not break. Once everything is well combined, turn off the heat.
