Instructions
- Blend all the green goddess dressing ingredients until smooth in a tall container, adding water if too thick. Taste and adjust the salt.
- Preheat the oven to 450°F/232°C.
- Cut the sweet potato into 1/2-inch cubes. Spread on a baking sheet, coat lightly with neutral oil and season generously with salt. Roast 20 to 30 minutes until crisp, turning them halfway through.
- Thinly slice the lettuce, cut the carrots into small pieces, roughly chop the almonds, and drain and salt the chickpeas.
- Pound the chicken breasts thinner or slice them in half. Salt all sides.
- Mix the paprika, garlic powder, onion powder and dried thyme. Coat the chicken evenly with this seasoning.
- Heat a drizzle of oil in a pan over medium heat. Sear the chicken until deeply coloured on one side, then flip. Cook through; if the seasoning burns before the inside is cooked, finish in the oven.
- Toss the lettuce with some dressing until evenly coated. Arrange in a wide, shallow bowl, then top with sliced chicken, carrots, roasted sweet potato, chickpeas, almonds, more dressing, goat cheese and pickled onion.
