Can Meghan Markle Help Invent the Next Girl Scout Cookie?
Ingredients
- Strawberry · dried2 cups + 2 tsp
- Speculoos cookies8
- Butter · softened1 cup
- Sugar⅔ cups
- Egg2
- Vanilla1 tsp
- Flour2 ¼ cups
- Baking soda1 tsp
- Baking powder½ tsp
- Salt½ tsp
- Strawberry jam⅓ cups
- Chocolate chip½ cups
- Coconut oil1 tbsp
Instructions
- Preheat the oven to 350°F (177°C) and line two baking sheets with parchment.
- Pulse the speculoos cookies in a food processor into coarse crumbs. Add the freeze-dried strawberries and pulse until finely crushed, with fine crumbs that are not powdery.
- Beat the butter and sugar until light and fluffy, about 2-3 minutes.
- Beat in the egg, egg yolk, vanilla extract and strawberry extract until smooth.
- Whisk the flour, baking soda, baking powder and salt in a separate bowl. Add the dry ingredients and the cookie-strawberry mixture to the butter and mix until a few streaks of flour remain.
- Gently swirl in the strawberry jam with only a few strokes, so ribbons of jam stay in the dough.
- Scoop the dough into 2-tablespoon portions and place them 3 inches apart on the prepared sheets.
- Bake for 13-15 minutes, until the edges are lightly golden and the centers just set.
- Cool on the baking sheet for 10 minutes, then move to a wire rack to cool completely.
- Microwave the white chocolate and coconut oil in 20-second bursts, stirring between each, until smooth. Drizzle over the cooled cookies and let set before serving or storing.
