- Applesauce · for serving1 cup
Instructions
- Line 2 baking sheets with clean kitchen towels.
- Rinse the grated sweet potatoes in cold water, squeeze them dry in a towel, then spread on a lined sheet and let dry about 10 minutes. Repeat with the russet potatoes on the second sheet.
- In a colander over a large bowl, mix the potatoes, 1/3 cup chives, garlic powder, onion powder, salt, pepper, cornstarch, egg whites and egg until well combined.
- Heat about 1/2 cup canola oil in a large heavy pan over medium-high heat until shimmering.
- Shape about 1/4 cup of the mixture at a time into patties about 3/8-inch thick and 3 inches wide.
- Fry in batches without crowding for about 2 minutes per side, until golden brown. If the oil runs low, add the remaining 1/2 cup and heat about 3 minutes before continuing.
- Drain on paper towels and season right away with salt.
- Arrange on a serving platter, sprinkle with the remaining tablespoon of chives, and serve at once with sour cream and applesauce.
