Ingredients
- Egg1
- Scallion2
- Salt1 pinch + ¼ tsp
- Sugar1
- Vegetable oil3 ¼ tsp
- Rice100 g
- Soy sauce1
Instructions
- Heat a skillet over medium heat (setting 4 of 9 on the creator's stove) for a few minutes until it warms up.
- Coat the pan generously with oil, then pour the excess into a bowl to keep for reuse.
- Add 1 tbsp fresh oil to the pan.
- Add the whisked egg and stir vigorously until it blends with the oil and fluffs up.
- Add the steamed rice before the egg is fully set.
- Do not lift the pan. Break up lumps gently with the spatula, spread the rice, and flip it over itself. Repeat.
- When the rice starts to dance, add the salt, sugar and white parts of the spring onions and stir a little.
- Turn the heat up to maximum.
- Add a few drops of light soy sauce and stir constantly. Add the green parts of the spring onions and keep stirring, for no more than one minute in total.
- Take off the heat, top with a little more sliced green spring onion, and serve immediately.
