Candied Cashews
Ingredients
- Cashew2 cups
- Sugar⅔ cups
- Cardamom · ground1 tsp
- Saffron½ tsp
- Dried rose petals1 tbsp
- Pistachio1 tbsp
Instructions
- Roast the cashews over low to medium heat until warmed through, about 5 minutes, without browning them. Alternatively, air fry them at 300 F for 3 minutes without preheating. Let them cool completely.
- Put the water, sugar and saffron in a medium pan and bring to a boil. Once the syrup bubbles, check for the one-string consistency.
- Turn off the heat. Add the cooled cashews and cardamom, then the rose petals and pistachios if using. Mix well.
- Keep stirring as the syrup thickens and coats the cashews. The syrup will dry out completely after 5 to 7 minutes.
- Spread the cashews on a tray and separate any that stick together. Let them cool completely, then store in an airtight container.
