Caramel Apple Pie French Toast
Ingredients
- Bread1
- Egg4
- Heavy cream½ cups
- Milk1 cup
- Sugar¼ cups
- Vanilla1 tsp
- Cinnamon · ground1 tsp
- Butter1 tbsp
- Apple20 oz
- Whipped cream · for serving
- Caramel sauce · for serving
Instructions
- Slice the brioche crosswise into 12 slices about 1½ inches thick. For best results, leave them uncovered at room temperature for a few hours to dry out slightly.
- In a small saucepan, combine the cream, milk, sugar, vanilla and cinnamon. Cook over medium heat, stirring, until the sugar dissolves, about 7 minutes.
- Whisk the egg yolks in a shallow dish. While whisking constantly, add 3 tablespoons of the warm cream mixture, then slowly whisk in the rest.
- Melt the butter in a large skillet over medium heat. Dip each brioche slice in the batter, turning to coat both sides, then remove right away. Cook until golden brown, 2–3 minutes per side, in batches, adding butter as needed.
- Layer the French toast on plates with apple pie filling between slices, then top with more filling, whipped cream, caramel sauce and a dusting of cinnamon. Serve immediately.
