Cast Iron Pizza Recipe
Ingredients
- Yeast1 tsp
- Sugar½ tsp
- Flour2 cups
- Salt1 tsp
- Olive oil4 tbsp
- Tomato15 oz
- Garlic2
- Basil¼ cups
- Black pepper
- Mozzarella cheese¾ cups
- Pepperoni12–15
Instructions
- Combine the yeast, sugar and warm water in a small bowl, and let stand 5 to 10 minutes to activate.
- Put the flour, salt and olive oil in a large bowl or stand mixer bowl. Add the activated yeast mixture and mix until combined and the dough starts to smooth out, 2 to 3 minutes. Add a little more water or flour if needed.
- Oil a bowl, put the dough in it, cover and refrigerate overnight to rise.
- Make the sauce: blend the sauce ingredients in a food processor or blender for a few seconds, leaving it chunky rather than smooth.
- Take the dough out of the fridge and cut it in half with a knife or dough scraper.
- Pour 1 tablespoon of olive oil into a cast iron pan, add one piece of dough and press it with your fingertips until it reaches the edges of the pan. Cover and let rise 30 minutes to 1 hour.
- Once the dough has risen slightly, spread 1/4 cup of sauce over it to the edges with a spoon. Top with the shredded mozzarella and pepperoni.
- Bake in a preheated oven as hot as it will go (about 250°C / 480°F) for 10 to 20 minutes, checking every few minutes. It is done when the crust has risen and is golden brown, the cheese has melted and the pepperoni sizzles.
- Let the pizza rest a few minutes. Run a spatula around the edges to loosen any cheese stuck to the pan, then cut and serve.
