Modo de preparo

  1. Combine the yeast, sugar and warm water in a small bowl, and let stand 5 to 10 minutes to activate.
  2. Put the flour, salt and olive oil in a large bowl or stand mixer bowl. Add the activated yeast mixture and mix until combined and the dough starts to smooth out, 2 to 3 minutes. Add a little more water or flour if needed.
  3. Oil a bowl, put the dough in it, cover and refrigerate overnight to rise.
  4. Make the sauce: blend the sauce ingredients in a food processor or blender for a few seconds, leaving it chunky rather than smooth.
  5. Take the dough out of the fridge and cut it in half with a knife or dough scraper.
  6. Pour 1 tablespoon of olive oil into a cast iron pan, add one piece of dough and press it with your fingertips until it reaches the edges of the pan. Cover and let rise 30 minutes to 1 hour.
  7. Once the dough has risen slightly, spread 1/4 cup of sauce over it to the edges with a spoon. Top with the shredded mozzarella and pepperoni.
  8. Bake in a preheated oven as hot as it will go (about 250°C / 480°F) for 10 to 20 minutes, checking every few minutes. It is done when the crust has risen and is golden brown, the cheese has melted and the pepperoni sizzles.
  9. Let the pizza rest a few minutes. Run a spatula around the edges to loosen any cheese stuck to the pan, then cut and serve.
