Cast Iron Tortilla Pizza
Ingredients
- Extra virgin olive oil½ tsp
- Tortilla1
- Store-bought or homemade pizza sauce¼ cups
- Mozzarella cheese · shredded1 ½ oz
- Parmesan cheese · grated1 oz
- Basil · roughly2
- Salt
Instructions
- Set the oven rack 6 to 8 inches below the broiler element and preheat the broiler to high.
- Heat the oil in a large cast iron skillet over high heat until shimmering. Lower the heat to medium-low and wipe out the excess oil with a paper towel.
- Place the tortilla in the skillet rough-side down. Spread the sauce evenly over it right to the edges, then spread the mozzarella and half the Parmesan the same way. Lightly season with salt, scatter with the torn basil and drizzle with olive oil.
- Broil the pizza until the cheese has melted and is starting to brown in spots, 2 to 4 minutes.
- Remove from the oven and sprinkle with the remaining Parmesan. Loosen the edges with a small metal spatula and check the underside. For extra crispness, set the skillet over medium heat, swirling and checking occasionally, until crisp enough to your liking.
- Slide the pizza onto a cutting board, then cut and serve right away.
