- Mustard seed¼ tsp
- Cumin½ tsp
- Curry1 sprig
- Onion1 ¼ cups
- Chili pepper1
- Ginger½ tbsp
- Garlic½ tbsp
- Tomato1 cup
- Salt¾–1 tsp
- Turmeric¼ tsp
- Chili powder½–¾ tsp
- Garam masala1 tsp
- Coriander seed · powder½ tsp
Instructions
- Heat the oil in a pan over low to medium heat. Add the mustard seeds, cumin seeds and curry leaves.
- When the seeds start to sizzle and pop, add the onions and green chilli and sauté for about 5 to 6 minutes until golden.
- Stir in the ginger and garlic and sauté for about 30 to 60 seconds.
- Add the tomatoes and salt and sauté until the tomatoes break down.
- Stir in the turmeric, red chilli powder, garam masala and coriander powder. Sauté for 30 to 60 seconds until the masala smells aromatic.
- Add the cauliflower florets and sauté for 1 to 2 minutes over medium-high heat.
- Pour in ½ to 1 cup of water or coconut milk and mix well. Be careful not to add too much liquid at once, as young cauliflower releases a lot of moisture.
- Cover and cook until the cauliflower is tender but not mushy. Add more water or coconut milk if needed to reach the desired consistency.
- Taste and adjust the salt and garam masala as you like.
