Cauliflower Taco "Meat"
Ingredients
- Walnut½ cups
- Onion½
- Jalapeño chili½
- Cauliflower1 head
- Tomato½
- Chili powder · flakes2 tbsp + ¼–½ tsp
- Lime
- Salt¾ tsp
- Avocado1
- Cilantro¼ cups + 1 tsp
- Black pepper1 dash
- Cumin · ground1 ½ tsp
- Paprika2 tsp
- Garlic powder½ tsp
- Oregano1 tsp
- Ancho chili · powder½ tsp
- Cinnamon · ground1
Instructions
- Line a large baking dish with parchment and preheat the oven to 375°F (190°C).
- In a food processor, process the walnuts, onion and jalapeño (if using) until coarsely chopped.
- Add the cauliflower florets and tomato and pulse a few times to break up the large pieces of cauliflower.
- Add the spices, salt, lime zest and 1 tsp oil, and process until the cauliflower is evenly shredded. If using a store-bought chili blend, add 1/4 tsp or more chipotle chili flakes or powder plus dashes of cinnamon, clove and black pepper.
- Spread the cauliflower walnut mixture evenly in the lined dish.
- Bake at 375°F (190°C) for 35-45 minutes, moving the mixture around twice. Taste carefully the second time and adjust salt and spices if needed. Keep baking until it reaches the desired consistency: the onion should be caramelized and the mixture crumbly but not overly dry.
- For the cilantro avocado cream: blend all the ingredients with 1/3 cup or more water until smooth. Add more lime juice or salt to taste.
- Serve the taco meat warm in warm tortillas with salsa, avocado cream, cilantro and jalapeño.
