Chakli recipe | Chakralu recipe | How to make easy chakli recipe
Ingredients
- Rice flour1 cup
- Chickpea flour¼ cups
- Fried gram powder¼ cups
- Salt½ tsp
- Sesame seed1 tbsp
- Butter1 tbsp
- Carom seed1 tbsp
- Chili powder½–¾ tbsp
- Asafoetida1 pinch
- Oil2 cups
Instructions
- Make fried gram powder by grinding 1/4 cup fried gram in a jar to a fine powder; or use 1/4 cup besan instead.
- Mix the rice flour, besan, fried gram powder, salt, sesame seeds, ajwain, hing and chilli powder in a large bowl.
- Heat 1 tablespoon of butter or oil until very hot but not smoking. Pour it quickly into the mixture and stir with a spoon first, then rub it in evenly with your fingers.
- Add water little by little, starting with 3 tablespoons and adding 1 teaspoon at a time, until a non-sticky dough forms. Do not knead; just mix and shape into a log.
- Grease the chakli press and fill it with dough. Press out spirals onto a moist cloth, dry cloth or parchment, and join the end neatly to the spiral.
- Heat oil over medium-high heat while you shape the rest.
- Test the oil by dropping in a little dough: it should sizzle and rise without browning. If it sinks, the oil is not hot enough.
- Slide 3 to 4 chakli at a time into the hot oil. Leave them undisturbed for 1 to 2 minutes until firm, then turn and fry over medium heat on both sides until crunchy and golden.
- Drain on a steel colander or cooling rack and cool completely, then store in an airtight jar.
