Ingredients

Instructions

  1. Cut the 400 grams of boneless skin-on chicken thighs into manageable pieces and sprinkle both sides with 1/4 teaspoon salt.
  2. Mix the 4 grams of grated garlic with 1 teaspoon curry powder into a spreadable paste, adding a little water if it is too stiff.
  3. Spread the paste over the meat side of the chicken.
  4. Place the chicken skin-side down in a non-stick pan over medium-low heat and brown the skin for about 4 to 5 minutes, pressing with tongs so it contacts the pan.
  5. Flip and brown the meat side for another 3 to 4 minutes. If the chicken is not fully cooked, turn it skin-side down again and finish cooking.
  6. Tip the pan, then blot excess oil with paper towel.
  7. Add 1/3 cup mango chutney and keep turning the chicken until the sauce forms a thick, shiny glaze on the outside.
  8. Garnish with cilantro and serve with rice.
