Cheap Meals - Chili Stuffed Poblano Peppers
Ingredients
- Avocado oil1 tbsp
- Onion · diced⅔ cups
- Garlic · minced3 cloves
- Ground turkey1 lb
- Tomato paste4 tbsp
- Chili powder1 tbsp
- Smoked paprika2 tsp
- Cumin2 tsp
- Cinnamon½ tsp
- Oregano2 tsp
- Chicken stock1 ½ cups
- Black bean · drained1 can
- Bell pepper · diced1 cup
- Cheese · shredded¾ cups
- Salt
- Black pepper
- Cilantro
Instructions
- Set the oven to 420°F (216°C).
- Heat the oil in a pot over medium heat, then cook the onion for 2-3 minutes until browned at the edges and slightly translucent. Add the garlic and cook.
- Add the turkey and break it up finely as it cooks, for 5-7 minutes until no pink meat remains. Add the seasonings and tomato paste and stir constantly, making sure all the meat is coated.
- Stir in the black beans and chicken stock, bring to a very low, gentle simmer and cook 15-20 minutes, until the chili is thick and stew-like, not watery.
- While the chili cooks, slice each poblano lengthwise and cut off a portion of the top to make a large pocket. Scrape out the seeds and membranes, then stuff with the chili and top with cheese if using.
- Place the peppers on a baking tray or casserole dish, cover with foil and bake for 20 minutes.
- Remove the foil for the final 3-5 minutes to brown the cheese.
- Season to taste with salt and pepper, and garnish with cilantro and lime juice.
