Preparación

  1. Set the oven to 420°F (216°C).
  2. Heat the oil in a pot over medium heat, then cook the onion for 2-3 minutes until browned at the edges and slightly translucent. Add the garlic and cook.
  3. Add the turkey and break it up finely as it cooks, for 5-7 minutes until no pink meat remains. Add the seasonings and tomato paste and stir constantly, making sure all the meat is coated.
  4. Stir in the black beans and chicken stock, bring to a very low, gentle simmer and cook 15-20 minutes, until the chili is thick and stew-like, not watery.
  5. While the chili cooks, slice each poblano lengthwise and cut off a portion of the top to make a large pocket. Scrape out the seeds and membranes, then stuff with the chili and top with cheese if using.
  6. Place the peppers on a baking tray or casserole dish, cover with foil and bake for 20 minutes.
  7. Remove the foil for the final 3-5 minutes to brown the cheese.
  8. Season to taste with salt and pepper, and garnish with cilantro and lime juice.
