Ingredientes
- Avocado oil1 colher de sopa
- Onion · diced⅔ xícara
- Garlic · minced3 dentes
- Ground turkey1 lb
- Tomato paste4 colheres de sopa
- Chili powder1 colher de sopa
- Smoked paprika2 colheres de chá
- Cumin2 colheres de chá
- Cinnamon½ colher de chá
- Orégano2 colheres de chá
- Chicken stock1 ½ xícara
- Black bean · drained1 lata
- Bell pepper · diced1 xícara
- Cheese · shredded¾ xícara
- Salt
- Black pepper
- Cilantro
Modo de preparo
- Set the oven to 420°F (216°C).
- Heat the oil in a pot over medium heat, then cook the onion for 2-3 minutes until browned at the edges and slightly translucent. Add the garlic and cook.
- Add the turkey and break it up finely as it cooks, for 5-7 minutes until no pink meat remains. Add the seasonings and tomato paste and stir constantly, making sure all the meat is coated.
- Stir in the black beans and chicken stock, bring to a very low, gentle simmer and cook 15-20 minutes, until the chili is thick and stew-like, not watery.
- While the chili cooks, slice each poblano lengthwise and cut off a portion of the top to make a large pocket. Scrape out the seeds and membranes, then stuff with the chili and top with cheese if using.
- Place the peppers on a baking tray or casserole dish, cover with foil and bake for 20 minutes.
- Remove the foil for the final 3-5 minutes to brown the cheese.
- Season to taste with salt and pepper, and garnish with cilantro and lime juice.
