Cheddar Biscuits
Ingredients
- Flour2
- Baking powder1 tbsp
- Baking soda½ tsp
- Garlic powder1 ¼ tsp
- Salt1 tsp
- Butter · cubed, melted10 tbsp
- Buttermilk1 cup + 2 tbsp
- Honey2 tsp
- Cheddar cheese · shredded1 cup
- Parsley · dried chopped1 tsp
Instructions
- Preheat the oven to 425°F (218°C).
- Mix the flour, baking powder, baking soda, garlic powder and salt. Cut in the cold cubed butter until coarse crumbs form.
- Stir in the shredded cheddar. Make a well, pour in 1 cup (240 ml) of the buttermilk and drizzle the honey on top. Fold together until the dough starts to come together; do not overwork it.
- Turn the shaggy dough onto a generously floured surface and gently bring it together with floured hands. Flatten to a 3/4-inch-thick rectangle, fold one side into the center, then the other side over it. Turn it sideways and flatten again. Repeat the folding and turning two more times, then flatten into a final 3/4-inch-thick rectangle.
- Cut out 2.5- or 3-inch circles with a biscuit cutter, pressing straight down without twisting. Re-roll the scraps until all the dough is used, for about 8-10 biscuits.
- Arrange the biscuits in a 10-inch cast iron skillet or close together on a parchment-lined baking sheet, so they are touching.
- Brush the tops with the remaining buttermilk. Bake 18-22 minutes, until the tops are golden brown.
- Mix the topping ingredients and brush generously over the warm biscuits. Serve warm.
