- Butter · cubed½ cups
- Chili pepper · seeded finely chopped3
- Scallion · thinly sliced2
- Garlic powder1 tbsp
- Sugar2 tsp
- Baking powder1 ½ tsp
- Black pepper1 tsp
- Salt · for garnish½ tsp
- Buttermilk½ cups
- Cheddar cheese · shredded1 ½ cups
- Egg1
- Jalapeño chili8
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Rub the cold butter into the flour with your fingers until coarse crumbs form. A fork or pastry cutter also works, but don't let the butter soften.
- Stir in the chiles, scallions, garlic powder, sugar, baking powder, black pepper and salt until evenly coated in flour.
- Gently fold in the buttermilk with a spatula until most of the flour is moistened, without overmixing. Fold in the cheese a few times; the dough will look clumpy.
- Turn the dough onto a floured surface and press it into a 2–3 inch thick rectangle. Cut it lengthwise in half, stack the halves, and flatten again to about 2 inches thick.
- Halve, stack and flatten again, repeating 2 or 3 times, until you have several layers of toppings and butter.
- Cut the stack crosswise into 8 equal pieces and arrange them on the lined baking sheet.
- Whisk the egg with the warm water, brush it over the biscuits, then sprinkle with flaky sea salt and top each with a jalapeño slice if using.
- Bake for 20–25 minutes, until golden and flaky.
