- Extra virgin olive oil3 tbsp
- Salt1 ¼ tsp
- Flour2 ¼ cups
- Baking soda1 tsp
- Yoghurt½ cups
- Milk¾ cups

- Butter3 ½ tbsp
- Olive oil2 tbsp
Instructions
- Preheat the oven to 180°C/350°F (fan or standard).
- Grease a 21 x 11 x 7 cm loaf pan lightly with butter or oil spray and line it with baking paper.
- Mix the herb and garlic swirl ingredients in a small bowl until it is a thick mixture that can be dolloped.
- Whisk the dry ingredients together in a bowl.
- Whisk the wet ingredients together in a separate bowl.
- Make a well in the dry ingredients, pour in the wet ingredients and mix until just combined.
- For the first layer, pour in a third of the batter. Dollop a third of the herbs over the top and swirl with a knife up and down, turning the batter over. Push a third of the cheese slices randomly into the batter, some fully in and some poking out.
- Repeat the layering two more times.
- Bake for 30 minutes, until the top is golden. Cover with foil and bake for a further 20 minutes (50 minutes total). Check the centre with a skewer; it should come out clean.
- Cool in the tin for 5 minutes, then turn out onto a rack. Cool for at least 10 more minutes before cutting thick slices.
