Ingredients

Instructions

  1. Lay a sheet of baking paper on a chopping board, then place a puff pastry sheet on it. Drizzle with extra virgin olive oil and brush it over the whole sheet.
  2. Brush one side of the second pastry sheet with olive oil and set aside.
  3. Spoon a generous amount of basil pesto into the middle of the first sheet and spread it evenly with the back of a spoon.
  4. Lay 6 to 8 slices of provolone side by side to cover the sheet. Top with thin slices of prosciutto.
  5. Cover with the second sheet, oiled side facing down. Cover with baking paper and press gently with a rolling pin, rolling back and forth, so the layers seal well. If the pastry gets sticky, freeze it for a couple of minutes.
  6. Remove the top baking paper and move the pastry to a flat baking tray.
  7. Cut the pastry into strips about 3 cm wide with a pizza cutter or sharp knife.
  8. Twist each strip starting at the centre and working down both ends. Press back any filling that pops out. Space the twists apart on the tray as they will grow.
  9. Bake at 200°C for 30 minutes, turning them once after 15 minutes, until crisp.
