Cheeseburger Spring Rolls
Ingredients
- Ground beef · minced500 g
- Onion · peeled finely chopped1
- Salt½ tsp
- Black pepper½ tsp
- Cheddar cheese · grated75 g
- Cheese · grated75 g
- Pickle · finely chopped2 tbsp
- Spring roll wrapper12
- Oil for deep frying
- Special sauce
- Mayonnaise6 tbsp
- Ketchup6 tbsp
- Mustard1 tbsp
Instructions
- Heat a large frying pan over medium-high heat.
- Add the minced beef, onion, salt and pepper. Fry for 6-7 minutes, stirring often to break up lumps, until the beef is browned and the onion is soft.
- Turn off the heat and let the mixture cool for 20-30 minutes, until roughly room temperature. You can move it to a bowl to speed this up.
- Meanwhile, mix the mayonnaise, ketchup and mustard in a small bowl for the special sauce. Set aside.
- Once cooled, stir in the grated cheddar, grated Leicestershire cheese and chopped pickles.
- Heat the oil in a heavy-based pan to 190°C/375°F.
- Place one wrapper with a corner pointing towards you. Keep the rest covered with a damp tea towel. Put a heaped tablespoon of filling near the bottom corner, leaving about an inch of space at the bottom, and shape it into a sausage.
- Roll up the wrapper, tucking in the sides just before the final roll, and seal the edge with a little water. Place on a plate or tray and repeat with the rest.
- Fry six rolls at a time, one by one, in two batches. Cook 3-4 minutes, turning often, until golden brown. Drain on kitchen paper.
- Serve the rolls with the special sauce.
