Ingredients

Instructions

  1. In a large bowl, mix the milk, yeast, sugar, milk powder and egg.
  2. Add the flour and salt and mix until a dough forms.
  3. Add the softened butter and mix until fully absorbed.
  4. Knead, slap and fold until the dough is smooth and elastic.
  5. Shape into a ball, cover and let rise for 1 hour or until doubled in size.
  6. Make the filling: beat the softened cream cheese, sugar, lemon juice and vanilla until smooth, then set aside.
  7. Punch the dough down to release the air and divide it into 12 equal portions of about 70 grams each.
  8. Shape each portion into a ball, cover and rest for 10 minutes.
  9. Roll each piece and flatten to about half an inch (about 1.25 cm) thick.
  10. Place the buns on a sheet pan lined with parchment paper, cover and let rise for 30 minutes. Preheat the oven to 170°C / 340°F about 15 minutes before baking.
  11. Press a cup or glass into the centre of each bun, add filling and blueberries.
  12. Brush the edges with buttermilk or milk.
  13. Bake for 15 to 18 minutes.
  14. Dust with icing sugar before serving.
