Cheesy Green Bean Casserole | Chef Jean-Pierre
Ingredients
- Green bean · trimmed1 lb
- Bacon · diced4 oz
- Button mushroom · sliced8 oz
- Salt
- Black pepper
- Ham · diced4 oz
- Butter3 oz
- Flour3 oz
- Milk2 ¼ cups
- Brie · chopped8 oz
- Cheddar cheese · shredded4 oz
- Nutmeg · ground¼ tsp
- Parmesan cheese · grated¼ cups
- Bacon bit · for garnish¼ cups
Instructions
- Preheat the oven to 375°F (190°C).
- Blanch the green beans in boiling water until tender but still crisp, then move them to ice water to keep their color.
- In a frying pan over medium-low heat, cook the diced bacon until it renders its fat, without burning the lean parts. In the same pan, sauté the mushrooms with salt and pepper until they have released their moisture and turned light golden brown. Add the ham and cook for a couple of minutes.
- In a saucepan, melt the butter, whisk in the flour and cook for a couple of minutes. Gradually whisk in the milk and keep whisking for another couple of minutes. Add the Brie, Cheddar and nutmeg and cook over very low heat until smooth and thickened.
- Stir in the cooked bacon, ham and mushrooms, then adjust the salt and pepper.
- Toss the green beans in the sauce until well coated.
- Transfer to a greased 2-quart (2 L) baking dish, top with Parmesan and bacon bits if using, and bake for 20–25 minutes, until bubbling and heated through.
