CHEESY Pasta with Tomato Paprika Sauce | CRAZY Good One-Pan Recipe

By Spain on a Fork · 30 min

Ingredients

Instructions

  1. Heat the olive oil in a large fry pan over medium heat.
  2. Add the chopped onion and garlic and stir constantly; once the onion is translucent (about 5 minutes), add the paprika and oregano and mix quickly.
  3. Add the tomato sauce and diced tomatoes, season with salt and black pepper, turn the heat up high, stir and simmer.
  4. After about 4 minutes, when the tomatoes have slightly thickened, add the vegetable broth, stir and bring to a boil.
  5. Add the penne and stir every 2 to 3 minutes so it does not stick and cooks evenly.
  6. When the pasta has cooked for 9 minutes (3 minutes short of al dente, for pasta that takes 12 minutes; check your package), scatter the mozzarella evenly over it.
  7. Cover the pan, lower to low-medium heat and simmer 3 to 4 minutes, until the pasta is al dente; then turn off the heat and remove the lid.
  8. Top with the grated Manchego and chopped parsley and serve at once.
