Ingredients

Instructions

  1. Mix the yeast, warm milk and 1 teaspoon of the sugar, and let it foam.
  2. Add the rest of the sugar, the salt and the butter, stir, then add the flour gradually.
  3. Knead for 7–8 minutes until smooth and elastic; it should pass the windowpane test.
  4. Put the dough in an oiled bowl, cover, and leave somewhere warm for 1–2 hours until doubled.
  5. Mix the roasted garlic butter ingredients together.
  6. Roll each bocconcini lightly in the za'atar so it is coated.
  7. Punch down the dough and divide it into 12 equal pieces.
  8. Flatten each piece slightly and brush a little garlic butter inside.
  9. Place a za'atar-coated bocconcini in the centre of each piece.
  10. Pinch the dough tightly closed and roll into a smooth ball.
  11. Place the buns seam-side down on a lined tray, cover and let rise for 45–60 minutes until puffy.
  12. Bake at 180°C for 20–25 minutes until golden.
  13. As soon as they leave the oven, brush generously with the remaining garlic butter.
  14. Optionally, sprinkle with extra za'atar or a pinch of flaky salt.
