Cheesymite Scrolls
Ingredients
- Bread flour4 cups
- Yeast3 tsp
- Sugar2 tsp
- Salt1 ¼ tsp
- Milk1 ½ cups + 2 tbsp
- Butter50 g
- Marmite3 tbsp
- Colby jack cheese5 cups
Instructions
- Check that the yeast is fresh; if it is old or was not stored in the fridge, test it first.
- Put flour, yeast, sugar and salt in a stand mixer bowl with a dough hook and mix briefly. Add the milk and mix on low until no dry flour remains. Beat on low, increasing to medium partway, for 5 minutes until smooth.
- Shape the dough into a ball, return it to the bowl, cover and let it rise in a warm place for 1.5 hours or until doubled.
- Punch the dough down. On a lightly floured surface, shape it into a rough rectangle and roll out to 48 x 28 cm (11 x 19 in).
- Spread the dough with the softened butter, then the Vegemite. Sprinkle evenly with 300 g (3 cups) of the cheese.
- Roll into a log and cut into 12 even pieces.
- Preheat the oven to 180°C (350°F), 160°C fan. Grease a 23 x 33 cm (9 x 13 in) pan with butter and line with baking paper with overhang.
- Place the scrolls in the pan, spaced apart. Cover loosely with lightly oiled cling wrap and rise in a warm place for about 30 minutes, until they have grown by 30-50%.
- Top with the remaining cheese and bake 25 minutes. Rotate the pan and bake a further 10 minutes at 200°C (375°F), 180°C fan, until the edge cheese is light golden.
- Cool in the pan for 5 minutes, lift the slab out with the paper onto a rack and cool 5 more minutes. Pull the scrolls apart and serve warm.
